In the spirit of reviving a classic, our IPA Fondue recipe is our salute to the 70’s. Because drinking India Pale Ale is every bit as hipster today, as fondue was back then!

INGREDIENTS
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 tablespoons plain flour
- 350ml India Pale Ale, room temperature
- 1 tablespoon dark molasses
- 1 teaspoon Worcestershire sauce
- ½ teaspoon cayenne pepper
- 1 ½ cups shredded Gruyere cheese
- 1 ½ cups shredded sharp cheddar
METHOD
- In the included saucepan of the Circulon Symmetry Chocolate 18cm Fondue Set, over medium heat, melt butter and olive oil.
- Whisk in flour and cook for about 5 minutes, stirring constantly to make a roux. Roux should be a dark, golden caramel colour.
- Slowly add beer and bring to a gentle boil.
- Reduce heat and simmer, stirring occasionally until mixture thickens.
- Add Worcestershire, molasses and cayenne, stirring thoroughly.
- Add cheese 1 cup at a time, thoroughly melting cheese after each addition.
- Whisk fondue until it is smooth and place on the lit fondue stand to serve.
- Serve with hearty bread, sweet apples, asparagus and grilled sausages for dipping.
Fondue etiquette
- The proper method for dipping your bread into the fondue mix is to scrape the bread on the bottom of the pot in a slow zigzag, or figure of eight - that way you not only stir the pot, but also get the full flavour of the cheese.
- Once you lift your bread out of the fondue mix, allow the excess cheese to drip back into the pot - this prevents wastage and allows it to cool a moment before consuming.
- It is considered poor taste to double dip or to put the fork/stick directly into your mouth -instead, slide the bread off the fork and onto a side plate to consume.
- The choice of beverage to complement fondue is white wine or black tea; never water, as it will cause you to feel bloated.
Here’s a few fun rules for your next fondue party:
- If you lose your bread in the fondue mix, you have to drink a shot of kirsch.
- If you forget to stir the pot when you dip, you have to properly stir the next piece and serve it to the person on your right.
- If someone puts their mouth on their fork/stick, they have to kiss the person on their left.
- Once you’ve eaten most of the fondue mix you will find a film of hardened cheese on the bottom. Referred to as “la religieuse” (French for “the nun”), this is considered to be a treat. Allow the person who has not dropped any bread into the fondue to enjoy it, or break it off and share.
