Ingredients:
- 2-3 eggs (beaten)
- ¼ cup roasted pumpkin cubes
- 3 cherry tomatoes halved
- 6 baby spinach leaves
- 1 tbsp crumbled feta cheese
- Salt & pepper to taste
Method:
- Warm pan over medium heat.Pour in beaten eggs and using a silicone spatula stir egg mixture gently until the mixture starts to set.
- Leave to cook until omelette is fully set then add fillings. Turn off heat and allow residual heat in pan to finish cooking.
- Season to taste and serve.
